Easy 30 Minute Ground Beef Stroganoff

This creamy, satisfying Ground Beef Stroganoff is served over tender egg noodles and can be made in 30 minutes! It’s simple to make, it will quickly become a weeknight dinner staple and it’s a great budget friendly meal.

One of our family’s favorite comfort food dinners is Beef Stroganoff. It’s an old recipe but such a good one! On my first trip to Michigan after my husband and I got married, his grandma (which I immediately nicknamed Smiley Grandma because I’m completely certain she smiles even while sleeping! Lol She’s the best!!!) gave me a cookbook that her church had put together. Those recipes are often my favorite because who doesn’t love home cooked comfort food? You already know they’re my jam! 😉

This stroganoff is made with ground beef to make it that much quicker to prepare and it satisfies that craving for a warm, comforting dinner. Many of the ingredients you’ll need for this recipe are pantry or refrigerator staples. This is a casual twist on a classic which usually has cremini mushrooms or canned cream of mushroom soup but our family isn’t a mushrooms fan so we skip on those. It’s still every part delicious though! 😉 

There’s a few ways you can serve beef stroganoff. Our favorite is on a bed of buttered, thick egg noodles. You can also serve it on mashed potatoes or rice. Both taste great! I usually use the ‘extra wide’ noodles in this dish, but ‘wide’ and ‘medium’ work as well if that’s all you have on hand. 

This is such a great and easy dinner that the whole family will enjoy. You finish it off with sour cream and it just adds that rich and tangy flavor that you will love! Hope you give this one a try and it’s another one of my dinners you can have on the table in 30 minutes.

INGREDIENTS

  • 1 1/2 lb lean ground beef
  • 3 tablespoons flour
  • 1 envelope onion soup mix
  • 2 tablespoons tomato paste
  • 2 1/2 cups water
  • 1/2 cup sour cream
  • 340g egg noodles

INSTRUCTIONS

  1. Cook your egg noodles according to the package. Drain and set aside.
  2. In a large skillet, brown ground beef on medium heat. Drain grease (I also rinse mine, always!). 
  3. Add beef back to the skillet and add flour, onion soup mix and tomato paste. Stir together to mix well. 
  4. Add water, stir and bring to a boil on medium high heat. Turn heat to low and simmer, covered, for 10 minutes. Stir in sour cream. 
  5. Serve over cooked egg noodles or add in the cooked noodles, stirring to make sure it is fully mixed.

    how about using beef broth instead of water
