Soft & Chewy Chocolate Chip Cookies

If you’re besties with Chips Ahoy, I apologize in advance about the rift these cookies may cause. 😉 I really do hope you enjoy these yummy cookies. They are seriously the chewiest and softest cookies!

These chocolate chip cookies are a favorite in our house. And this recipe is the reason! These cookies are so soft, perfectly chewy, a hint of saltiness, ooey gooey chocolate and just so irresistible. I always, always double this recipe if I make them on the weekend, which means all.the.boys. are home and wait so impatiently while they bake. The first dozen usually disappears before the second batch is out of the oven! 😉 Trust me. They’re that good.

Nothing beats a batch of freshly baked cookies and a tall glass of cold milk. I’ll (almost) always pick savory over sweet but even I can’t resist to sneak a few of these off the cookie sheet.

Yield: 24 cookies

INGREDIENTS

  • 1/2 cup unsalted butter, softened
  • 3/4 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1/2 teaspoon vanilla
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons cornstarch
  • 1 teaspoon baking soda
  • 1/2 teaspoon sea salt  
  • 1 1/2 cups semi sweet chocolate chips
  • 1/2 toffee bits, optional

INSTRUCTIONS

  1. Preheat oven to 350 degrees F and line a cookie sheet with a silpat or parchment paper. 
  2. Using a mixer with a paddle attachment, cream butter and sugars on medium speed until light and fluffy, 2-3 minutes. 
  3. Reduce speed and add in the egg and vanilla and beat just until combined.  
  4. Add all the dry ingredients, mixing until combined.
  5. Stir in the chocolate chips or just turn on mixer for a couple of seconds, careful to not over-mix!
  6. Using a medium cookie scoop, drop cookie dough onto a baking sheet, 2 inches apart. 
  7. Press dough down very slightly to flatten and bake for 10-11 minutes. 
  8. Let cookies rest on baking sheet for 5 minutes before transferring to cool on a wire rack.

That little hand. 🙂 My youngest (who’s 4) loves helping me in the kitchen and baking these cookies is his favorite. It’s his job to slightly flatten them.
