Flavorful Baked Pork Tenderloin

INGREDIENTS

  • Pork tenderloin, 1-1 1/2 pounds
  • 3 tablespoons kosher salt
  • 2 cups warm water
  • 1 tablespoons apple cider vinegar
  • 2 tablespoons brown sugar
  • 1 cup ice cubes
  • 1 tablespoons lemon juice
  • 3 tablespoons butter, sliced
  • 1 1/2 tablespoons chili powder 
  • 1 1/2 tablespoons garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon onion powder 
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon pepper
  • 1/4 teaspoon dried parsley
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon dried thyme

INSTRUCTIONS

  1. Place pork tenderloin into a medium sized glass bowl.
  2. In a small mixing bowl whisk together kosher salt and warm water, add apple cider vinegar, brown sugar and ice cubes. 
  3. Pour mixture over the pork tenderloin and let it sit for 20 minutes. Anything longer than that will cause the meat to get grainy and tough. 
  4. Rinse and pat the tenderloin very dry.
  5. In a small bowl, whisk together chili powder, garlic powder, salt, onion powder, smoked paprika, and pepper. Evenly rub pork all over with spice mix.
  6. Preheat the oven to 400 degrees. To cook, heat an oven-safe heavy skillet over high heat. Sear the pork tenderloin for 2 minutes on each side. Once browned on all sides and ends, evenly sprinkle tops of pork tenderloin with remaining herbs (parsley, basil, oregano, thyme) then rub into pork. Evenly drizzle each pork tenderloin with one tablespoon of lemon juice, then top the tenderloin with 3 pads of butter.
  7. Transfer skillet immediately to the oven and cook until the internal temperature reaches 145-150 degrees, about 20 minutes.
  8. Let it rest for 5 to 10 minutes before slicing and serving.
  9. Season with additional salt and pepper to taste and serve with butter sauce in the bottom of the pan.
