Yield: 6 servings
INGREDIENTS
- 2 2/3 cup chicken broth
- 3 tablespoons unsalted butter
- 1 tsp course sea salt (if using low sodium broth)
- 1/2 tsp garlic powder
- 1/4 tsp ground black pepper
- 1/8 tsp paprika
- 1/8 tsp onion powder
- 2 tablespoon olive oil
- 1/3 cup orzo
- 1 cup long grain white rice, rinsed
INSTRUCTIONS
- In a glass measuring cup, add 2 2/3 cups hot chicken broth, butter, salt, garlic powder, pepper, paprika, and onion powder. Stir until butter is melted.
- In a large skillet, add 2 tablespoons olive oil and set heat to medium. When the oil is hot, add the orzo and cook until brown, about 4-6 minutes. Add rinsed rice to the skillet and toast lightly for 2-4 minutes.
- Pour the warm broth mixture into the skillet. Stir well to combine, then increase heat to medium high and bring to a boil. Once it starts to boil, reduce heat to medium-low, cover skillet with lid, and simmer until the rice is tender, and the liquid has been absorbed, 20 minutes.
- Remove from heat and let stand for 5 minutes then fluff with a fork, serve warm and enjoy.
