Easy and Flavorful Baked Chicken Breasts

Deliciously seasoned and perfectly tender baked chicken breasts with so much flavor, I guarantee you that it will become your family’s go-to! It’s a super simple recipe to follow that you can use for sandwiches, soups, salads, casseroles or simply for dinner with a couple of sides. 

If you’ve known me long enough, you know I like easy, quick but still delicious homemade goodness! Who doesn’t? Being a busy mom of three boys, I’m constantly creating recipes in my head… all.day.long. With two of our boys in school full-time and one part-time, I really don’t have much time to prepare meals that take several hours. I leave those for the weekend! 😉 But I also don’t do frozen dinners. Hey, I’m not judging. You do you. I’m just too picky and have never found one that my tastebuds enjoyed. Which has brought me to this blog! Creating simple, fairly quick, and homemade dishes. So let’s do this! 

These baked chicken breasts are a go-to in our home. They go with EVERYTHING! You can use them for sandwiches, wraps, throw into casserole dishes, homemade soups, eat cold straight out of the fridge at midnight (tell me I’m not the only one), or use it as a main course for dinner with veggies and a side. Whatever you use it for, I promise you it’ll make the tastiest meal!

No brining or marinating is needed for this recipe. I told you, I like easy, and usually when I have to marinate something, I almost always forget about it in the fridge for a few days. LOL! So although this is a simple and easy dish to make, it’s one of the BEST chicken recipes you’ll ever make! It’s just a very flavorful seasoning rubbed all over your chicken and you can relax while your oven does all the work. Always remember when baking chicken, do not overcook it!! Yield: 6 servings

INGREDIENTS

  • 6 medium chicken breasts, pound each breast to same thickness to ensure even cooking
  • 1 1/2 tablespoons olive oil
  • 3/4 teaspoon onion powder
  • 3/4 teaspoon garlic powder
  • 1 1/2 teaspoon chili powder 
  • 1 1/2 teaspoons seasoned salt
  • 1 1/2 teaspoons dried oregano
  • 2 1/4 teaspoons paprika
  • 1 1/2 tablespoons brown sugar, packed  
  • 1/4 teaspoon pepper, or more to taste
  • 4 1/2 tablespoons butter (optional; see notes)
  • 3 garlic cloves, minced (optional; see notes)
  • 3 teaspoons fresh parsley, chopped (optional; see notes)

INSTRUCTIONS

  1. Preheat your oven to 400F.
  2. Line a baking sheet with aluminum foil. You can also use a greased or buttered baking dish.   
  3. In a small bowl, mix onion powder, garlic powder, chili powder, seasoned salt, dried oregano, paprika, and brown sugar. Set aside. 
  4. Pat dry the chicken breasts with paper towels. 
  5. Place the chicken in a single layer on the baking sheet and drizzle with the olive oil. Rub the oil all over each chicken breast. Then season the chicken breasts with the dry rub on both sides to evenly coat.
  6. Bake for 20-25 minutes or until internal temperature reaches 165F. 
  7. Broil for the last 2-3 minutes until golden and slightly crispy on the edges. But watch carefully as it can burn quickly!     
  8. Remove from the oven, and let the chicken rest for 5 minutes.
  9. Serve and enjoy!

Recipe Notes

  • Optional: While the chicken breasts are baking, melt the butter in a small saucepan, on medium heat. Sauté minced garlic until fragrant, about 30 seconds to a minute (watch carefully) and remove from heat. Add in the parsley. When the chicken is finished baking, pour the butter mixture in with the rest of the pan juices and stir well to combine all the flavors. Drizzle the mixture over the chicken and top with more fresh parsley!
