Chicken Salad Sandwiches

These delicious Chicken Salad Sandwiches are our favorite easy go-to dinner for serving a crowd in the summer or taking with us on a picnic at the beach! The flavors and textures are an amazing combination of sweet and savory, creamy and crunchy!

Of all the summer salads, classic chicken salads are my favorite! I love how versatile it is and with just a few ingredients it can be transformed into the easiest and tastiest lunch or dinner. It’s the perfect crowd food and can be doubled and tripled so easily. Our three boys all have birthdays the first 3 months of the year and without question, you’ll find these sandwiches at one of their parties. 😉 I’ve been making this recipe for years and I don’t plan on stopping anytime soon. YUM!! I always make extra for leftover lunches and no one ever complains!

When your days are busy, it can be hard to find the time to prepare lunch. That’s why I like recipes like this that I can prep and eat for a couple of days.

How Long Does Chicken Salad Last?

Chicken salad should be stored in an airtight container in the refrigerator for up to 3 days. Don’t leave it out at room temperature for more than two hours for food safety.

How Do You Make Chicken Salad From Scratch?

It really is easy and much better than any store bought chicken salad you can buy. It has the perfect blend of chicken, green veggies, grapes, and seasonings. In the past, I have tried chicken salad from canned chicken (I can’t believe I’m admitting this – LOL), I am NOT going to judge you if that’s what you use but I just can’t!! I’m a huge chicken salad fanatic and it has to be fresh and just right. I love to use the leftover chicken when I make rotisserie chicken. This is a huge time saver!

Can Chicken Salad Be Frozen? 

No. The mayonnaise will separate when defrosting. You can freeze the cooked chicken and once it’s defrosted, add the other fresh ingredients the day of.

This salad is wonderfully creamy without being overly wet and has the perfect balance of flavors. The fresh veggies and grapes add the BEST addicting crunch! 

Use this chicken salad recipe for sandwiches, it’s great on croissants or in wraps.  Or serve it on top of a bed of salad leaves with some sliced tomatoes. You’re going to love it however which way you serve it! 

I love to prepare the chicken salad at least 4 hours in advance. That way the flavors have a chance to hang out and meld together. It’ll be worth the wait. I promise. 

Yield: 6 servings

INGREDIENTS

  • 4 cups cooked shredded chicken
  • 3 stalks celery, sliced 
  • 1 1/2 cups red grapes, halved
  • 1/4 chives, thinly sliced  
  • 1 cup mayonnaise (I love to use Hellmann’s)
  • 1/4 cup ranch dressing
  • 2 tablespoons fresh dill, chopped
  • 1 teaspoon black pepper
  • 1/2 teaspoon salt
  • juice of 1 small lemon
  • Rolls of your choice

INSTRUCTIONS

  1. Place the shredded chicken, celery, red grapes and chives in a large mixing bowl and stir to combine. Set aside. 
  2. In a medium-sized bowl, add the remaining ingredients to make the sauce and stir to combine. Pour the sauce over the chicken salad and stir to combine and thoroughly coat the salad.
  3. Cover and chill in the fridge for at least 4 hours before serving.
  4. Serve on sandwiches, croissants or in wrap. Enjoy!
